AMD, decently spec’d . 8 cores, 32 GB ram, 2070 TI.

That looks really unmaintained, the last update was yeas ago. I wouldn’t just run random shell scripts from the Internet without understanding what they do first.

Some NAS stack (I use TruNAS).
Photo / image management (owncloud/nextcloud/Immich etc).
Location tracking: Dawarich / reitti.
Docker manager of some sort
